City to Full City+. Good for espresso. /// Full Cupping Notes At City to City+ roast levels, the dry fragrance displays a nice blend of sweetness, with accents of brown sugar, and apple. The wet aroma emits a smell of unrefined sugars, spiced caramels, and faint hints of fruit pastry. The brewed coffee brings a mix unrefined sugar and honeyed sweetness to the cup, propping up fruited accents, and top note hints. There's a nice aromatic contrast to the cup sweetness that helps build depth of flavor. Cupping a City roast, the coffee permeated with flavors of white honey, with some bittering that brought to mind Matcha powder, and fragrant top notes of lemon basil, and cinnamon powder. These flavors gave way to fruited hints too, though they were a little hard to put my finger on. Full City roasts pull out dark chocolate, cocoa powder, and fruit accents that were a little easier to pinpoint, like dried date, and apricot. These darker roasts double nicely as a single origin espresso. Ristretto shots extract a delectable dark chocolate syrup flavor, and fudgey bittersweetness, with hints of plum, and anise in the finish.
